A WINNER OF A CHICKEN DINNER

We are all familiar with the phrase "go-to dish" or "crowd pleasing dish". I'd say this is the student version of that. During my university days I used to make this on the weekends because that's when I mostly cooked in the initial stages of my cooking journey and also that's when I used to buy those fresh button mushrooms from the local Hungarian fruit lady as most of us international students living in that street lovingly called her. And whenever I made this it would be like the word "crowd pleaser", a major winner for everyone who ate. Pair this with a semi-dry white wine and you are good for that Friday night hangout with your pals. Maybe get a deck of cards as well.
Ingredients: 10-12 sprigs of Scallions/Spring onions, 10 cloves of garlic, 3-4 chillies, 200g of button mushrooms (a box), 250g of chicken, cream cheese, fresh herbs (cilantro/basil/parsley), olive oil, 5 cups of drinking water, 1 tsp turmeric powder, 1 tsp paprika powder, 1 tsp curry powder, 1 tsp lemon powder, 1 tsp cumin powder, 2 tsp salt or as required.
Directions:
1. Heat the olive oil to add the chillies and garlic. About a minute later add the chopped scallions. Stir fry well.
2. Add the thinly sliced mushrooms and stir well. Add the salt to draw the moisture out of the mushroom and mix well to combine.
3. About 5 minutes later, add the spices. Mix well and cook on high flame until the oil separates.
4. Add the chicken, followed by water and cook all these goodies on medium flame until it boils and reduces to about half of the water. The chicken should be fork tender.
5. Add a dollop of cream cheese and freshly cut herbs and mix well. Take off the flame and wait for 10 minutes until plating.
I had mine this time with steamed rice as the picture above. This pairs well over mash potatoes, with quinoa or even some warm tortillas. Always a winner. For the instruction video please click the link

Storage: Refrigerate in airtight container for 3 days or 2 weeks in freezer.
